Bar and Waiting courses
Our Bar and Waiting courses provide practical and current skills in the food and beverage area and are designed to enable graduates to gain work quickly in the industry as a bar person, drinks, wine and food or beverage attendant. 
The course comprises four distinct areas which may be combined or undertaken separately.
ALL UNITS are Nationally Recognised and approved.
The courses comprise both practical and theoretical aspects pertaining to food and beverage service.
Successful course completion requires regular attendance and study time. Attitude and presentation are also important to ensure students achieve competency.
There are practical and theoretical assessments. Students must achieve competency in the assessment(s) in order to be issued with a Certificate / Statement of Attainment.
In the service industry, high standards of personal hygiene and presentation are required at all times. Students must wear enclosed shoes but are not expected to wear a uniform, except on assessment days when students are required to wear the traditional black and whites of the hospitality industry. However, appropriate dress does not include: sandals, thongs, cutoffs or body shirts. Students need to bring a pen and paper to classes.
Work experience and Placement
In order to successfuly complete the Certificate II in Hospitality (Operations), work experience is mandatory. The School can find you a suitable venue for work experience unless you have a personal preference, eg, Hotel in a Country Town where you reside or a Hotel of your choice, the School will then arrange the necessary documentation for you.
This certificate provides students with a broad overview of the hospitality industry. It is designed primarily for anyone wishing to enter the hospitality field but does not posses any real understanding of what the industry has to offer and the attributes needed to be successful in it.

Introduction to hospitality
Upon completion of this module, students will be able to competently:

Bar and service of dining
This module combines practical and theory to ensure students have the knowledge and ability to operate standard bars correctly and efficiently. Upon completion of this module, students will be able to competently:
- Clean and tidy bar area
- Prepare a bar for service
- Work in a standard bar
- Use bar equipment
- Demonstrate service techniques
- Demonstrate correct cash handling procedures
- Conduct table service of drinks
- Demonstrate a basic knowledge of commonly served drinks (cocktails and mixed drinks)
- Demonstrate beer pouring
- Understand the basic legal requirements for the operation of bars
- Demonstrate adequate customer relations skills
- Provide responsible service of alcohol
- Understand customer expectations
- Complete floor plans
- Demonstrate table settings and a variety of napkin folds
- Set up waiter stations

- Greet, seat and farewell guests
